Avocado Toast with Fried Egg
Ingredients:
- 1 toasted slice of whole grain bread (ie Ezekiel)
- 1/2 ripe avocado
- 1 fried egg
- 1/2 TBSP lime juice
- Salt and pepper
Directions:
Peel and mash the avocado. Mix it with lime juice, salt, and pepper. Spread the mixture on the toast. Top with the fried egg, and season with salt & pepper.
Chocolate Peanut Butter Granola Apple Bites
Ingredients:
- 2 apples, sliced into wedges
- 1/4 cup peanut butter
- 1/4 cup granola, your favorite
- 1/4 teaspoon ground cinnamon, for sprinkling
- Semisweet chocolate chips, optional*
Directions:
Coat tops of apple wedges in peanut butter; sprinkle with granola & cinnamon. Melt chocolate chips in the microwave, stirring in 30 second increments until melted (be careful not to overheat). Drizzle wedges with melted chocolate & serve.
Spinach and Cheddar Microwave Quiche in a Mug
Ingredients:
- ½ cup chopped frozen spinach, thawed/drained
- 1 egg
- ⅓ cup milk (can be almond/soy/hemp/etc)
- ⅓ cup shredded cheddar cheese (can be dairy substitute ie 'Daiya')
- salt and pepper, to taste
Directions:
Make sure the spinach is completely thawed & drained and add it to the mug. Crack the egg into the mug with the spinach; add the milk, cheese, and salt & pepper. Mix until thoroughly combined. Cover with a paper towel and microwave on high for 3 minutes, or until fully cooked.
Tomato Toast with Ricotta & Pine Nuts
Ingredients:
- 1 toasted slice of whole grain bread (ie Ezekiel)
- 3 TBSP ricotta cheese
- sliced heirloom tomato (or cherry tomatoes)
- 1 TBSP pinenuts / chopped walnuts / etc
- Salt and pepper
- Drizzle balsamic vinegar (optional)
Directions:
Spread the ricotta on the toast and season with salt & pepper. Top with nuts and tomatoes; add a drizzle of balsamic vinegar if desired.
Pecan Cranberry Grits
Ingredients:
- Instant Grits packet, prepared with coconut milk
- 1 TBSP dried cranberries
- 1 tsp butter
- 1 TBSP chopped pecans
- drizzle of maple syrup
Directions:
Prepare the instant grits. Stir in butter and the rest of the ingredients. Drizzle with maple syrup to taste.
